WHOA – I haven’t been here in a while. Sorry! Been supra busy. And then there was that week where there was no internet access anyway due to the fact that North Alabama was devastated by a series of tornados. Trying to get back to my normal bloggy scheduling. This not will not be regular bloggy scheduling though. I’ll get back to that hopefully tomorrow. For now i will leave you with this. I am craving pancakes.
When I think of baking I think of the character Christian from the movie Clueless saying ” Honey, you baked!”. Anyway, I baked a chocolate bundt cake today and topped it with whipped strawberry icing and topped our slices with freshly sliced strawberries.


Last night the husband cooked asparagus to go along with our baked chicken. He made it my favorite way and it was oh so nummy.
Chop it up, throw it in the cast iron with butter, cumin, and shaved parmesan cheese. Mmmmmmmmmm.
The husband stumbled upon this recipe for 5 minute hot chocolate cake. He walked into the living room and said “I’m going to make a cake in the microwave with some hot chocolate mix.” I did not believe him.
Fresh out of the oven…errr…microwave. Sure it is shaped like it plopped out of a tin can when you dump it out – but it tastes scrumptious.
Very moist and easy and chocolicious. We chop it in half and share it.
Here is the recipe – try it out!
Grab yourself a microwave safe coffee mug.
Butter it, or oil it, or spray it.
Add three spoons of vegetable oil.
Add two packets of hot cocoa mix, two tablespoons flour, three tablespoons water and one egg, .
Mix with fork.
Cook, in microwave, for three minutes.
It will start to puff and raise and move, kinda like that goo from ghostusters when music plays. But don’t stop the microwave it shouldnt actually leave the premises of the mug.
EAT IT.




Eatin stuff.
Down with that canned stuff. Its really easy to make.
All you need is a cup of water, a cup of sugar, and 12 ounces of cranberries. If you want to you can add some orange zest or juice, walnuts, cinnamon, pecans, pretty much any fruit. You get the idea.

Pot + Sugar + Water + Berries.
Bring to boil, lower heat to simmer until berries crack open and the liquids reduce some.

You can serve it saucy or congealy.
Tonight it was Publix Premium Chocolate Chip Oatmeal Cookie! It was delectable. Choco chip oatmeal is my favorite type of cookie so I was excited to see this flavor in an ice cream. It is made with honey vanilla bean ice cream with swirls of cinnamon creme, chocolate chips, and oatmeal cookie pieces. Yum!
My favorite, go-to ice cream is …….Ben and Jerry’s Half Baked FroYo! Can Not Get Enough.
Can you guys read that? Chocolate and vanilla low fat frozen yogurt with fudge brownies and gobs of chocolate chip cookie dough. DA BEYST.
